In the last race I had to pit 1 round before end of race although the tyre wear was at 15% and there was enough fuel in the car. Can anyone explain why this happened, is it some kind of nasty random?

Did you check the race analisis to see if the pit was for other reason?
In the race analisis you can see the reason for the pit ;)

Did you have the 15% on the lap before pit (so did you read it from race replay)? Since it is perfectly possible that it is not enough 2 laps and you need to pit on the next lap.
However, if it says 15% in the race analysis then it's more curious as tyres shouldn't wear that fast.

The live screen only shows an approximate indication of tyre wear and fuel load.
Only the race analysis gives actual data.
Think of it like a real F1 team - they get some good data over the telemetry and feedback from the driver how the car is handling etc, but when they get the car in after the race they might see that the actual wear is slightly different than they calculated.

you only get whole numbers so for example although the wear might be 7.25% a lap so every 4 laps you would wear 8% instead of the 7 you have had on other laps

yes because you were defo wearing more than 7% per lap :)

nearly every number related to fuel and tires is rounded in some way by the time you see it.

Dzubur, it's just the rounding. You may have had 6.51% left an it would show as 7%, yet you maybe needed 7.49% to get the lap done. Best thing is to calculate the actual mileage you had from the tyres. But even that is slightly inaccurate due to the rounding. Once I had to pit with a lap to go, although it was working out that I should've gone around one more time and have 400m to spare, It's just the way tyre wear (and fuel consumption too) is rounded off to the nearest percent.
